It's hard to believe that yet another school year is coming to an end! Toddler Treats

We've recently received several emails asking for toddler lunch ideas. Here are two to get you started.

Little Bits

  • Steamed Eggplant
  • Banana and Almond Butter Rice Cake Sandwiches
  • Avocado
  • Steamed Yams
Toddler Lunch
1. Peel, cube, and steam the eggplant and spoon it into one of the large containers.

2. Make the rice cake sandwiches wth a slice of banana and a small amount of smooth almond butter, and place them in one of the medium containers.

3. Peel, cube, and steam the yams, and add them to the other medium container.

4. Cut up the avocado for the large container.


Fresh Strawberries and Steamed Veggies
  • Fresh Strawberries
  • Steamed Carrot Coins
  • Steamed Cauliflower
  • Kidney Beans
  • Whole Wheat Cheddar Bunnies
Toddler Lunch
1. Slice the strawberries and place them in the large lidded container.

2. Steam the cauliflower and add it to the large square container.

3. Peel, slice, and steam a carrot and place it in one of the medium containers.

4. Pack a handful of canned kidney beans in the other medium container.

5. Pour some of Annies whole wheat cheddar bunnies into the little dip container.

Eat Your Blues, Baby

Eating a wide variety of color foods is important for a healthy diet. A plate that resembles an artist palate is sure to provide optimal health as green, red, yellow and brown are staple colors that can provide a full range of vitamins, minerals and antioxidants. And, if your interest is in aging gracefully and keep your mind a powerhouse of information, don't forget to eat your blues; in particular, blueberries!

Research has found that blueberries rank #1 in antioxidant activity when compared to 40 other fresh fruits and vegetables. The pigment (anthocyanin), which makes blueberries blue, is thought to be the responsible factor. According to Tufts neuroscientist James Joseph, when it comes to brain protection, there's nothing quite like blueberries. I call the blueberry the brain berry, says Joseph, who attributes the effects to its antioxidant and anti-inflammatory compounds (Newsweek, June 17, 2002).

It has also been known by researchers, nutritionists and doctors that blueberries are rich in phytochemicals that have anti-aging effects. Berries, in general, are nutrient-dense and offer a lot of bang for the buck, but blueberries, in particular, have protective effects for brain health in later life. So, as you can see, eating your blues not only tastes great, but will reward your body and brain with superior nutrition with lifelong effects.

The best part? They provide loads of potassium, iron, vitamin C, and 2 grams of fiber in each 1/2 cup serving, which contains only 40 calories. And that's a lot of blueberries!

Add blueberries (local, fresh and organic preferred) to your cereal, yogurt or salads, or pack 'em and snack 'em all day at work. They are divinely yummy and your body will thank you.
