Sandwich Ideas
#1: Basil Dream
- Choose your favorite
(preferably whole-grain) bread.
- Spread soft goat
cheese on one slice.
- Spread a layer
of pesto sauce on top of the goat cheese.
- Add a layer of
chopped marinated sun dried tomatoes.
- Sprinkle with
pine nuts, sunflower seeds, or roasted cashews.
- Add a layer of
spinach leaves.
- Enjoy!
#2: Tuna Pocket
- Cut a piece of
(preferably whole grain) pita bread in half.
- Spread salad
dressing on the inside. (Creamy cucumber, ranch and balsamic vinaigrette
all work well.)
- Place a layer
of thinly sliced cucumbers inside.
- Place a layer
of thinly sliced tomatoes on top of the cucumbers.
- Add fresh grilled
tuna, canned tuna, or tuna salad.
- Add shredded
lettuce, cabbage, or sprouts.
- This sandwich
tastes great any time of year!
#3: Asian Delight
- Choose your bread.
- Spread the special
sauce on both slices. (Combine 1 tbs. mayonnaise, a sprinkle of soy
sauce, a sprinkle of Asian-style rice vinegar, a few drops of sesame
seed oil, and some spicy sambal if you like it hot.)
- Pile shredded
carrots, chopped cilantro, sliced cucumbers, baked tofu, spinach leaves
onto the bread.
- Add sliced jalapenos
if you like it spicy.
- Enjoy the rich
combination of flavors.
Practical
Lunchmaking Tips
- Don't forget to pack those
leftovers for lunch. Set your Laptop Lunch containers on the counter
during dinner cleanup, and fill them up as you go!
- Get those kids involved! Children can help wash or rinse their lunch
containers when they get home from school. It takes only a few minutes,
it reduces your workload, and it teaches kids to take responsibility
for themselves.
- Pack lunches the night before and keep them in the refrigerator
overnight.You'll have one less thing to think about in the morning.

- "It took
me a while to realize that Laptop Lunches are modular. Now, when I
want to pack a large burrito, I leave out the two front containers.
When I want to pack one of those bulky sandwiches, I take out the
two larger containers. It works great!"

They're so popular that parking is at a premium, and we often have
