Autumn Picnic

The leaves are beginning to turn and the weather is just perfect for spending a day out of doors! Take the afternoon to read in the park or go on a light hike in the woods and don't forget to pack your picnic bento!

  • Sweet Potato Salad
  • Sauteed Spinach
  • Multi-Grain Chips
  • Fresh Strawberries
  • Herbed Marcona Almonds

Preparation Notes

Prepare you sweet potato salad with baked and chopped sweet potatoes, butternut squash, cooked lima beans, white onions and some rosemary and thyme for seasoning. Salt and pepper to taste. Serve your salad cold into your large lidded container

Sautee some spinach in a pan with olive oil, crushed garlic, salt and pepper. Allow the spinach to cool and include a scoop in your medium lidded container. Dress lightly with apple cider vinegar or rice vinegar.

Place a few multi-grain chips in your medium un-lidded container.

In your bento divider, include a handful of herbed Marcona almonds. You can find out how to make your own here. Place the bento divider in your large lidded container and arrange some fresh strawberries alongside it for a sweet finish to your picnic lunch.
