Preparation Notes
This colorful lunch is light, flavorful, and delicious--perfect for spring, when asparagus is in season. Follow the recipe here or create your own roll-up by including your favorite ingredients.
Prepare the spring roll-ups. Spread goat cheese (or lowfat cream cheese) on a whole wheat tortilla, add a layer of fresh spinach leaves, sprinkle with olives and roasted red peppers or pimentos. Roll up and cut to fit into the medium container.
Cut the pineapple.
Cut and steam the asparagus.
Steam the fingerling potatoes.
Add cocktail sauce or ketchup. (Cocktail sauce can be made by combining ketchup and prepared horseradish.)
