Preparation Notes
The components of this flavorful lunch can be assembled into mini-sandwiches or enjoyed separately. They're colorful, light, and delicious!
Prepare the falafel. The easiest method is to purchase falafel mix from the bulk bins at your natural foods store. Just add water and fry. Instead of deep-frying, try pan frying in a small amount of extra virgin olive oil.
Slice the cucumbers.
Add the tomatoes.
Drop a few dates into the box.
