Preparation Notes
This lunch takes only a few minutes to prepare, especially if you cook the pasta the night before. The colors are lovely, and the fresh flavors can't be beat!
Boil the pasta per the instructions on the package. Top with either homemade or premade pesto sauce and stir gently to mix thoroughly.
Peel and segment the orange.
Peel and slice the jicama.
Cut the broccoli into bite-size pieces. Steam lightly or pack it raw.
