Preparation Notes
Peel, cube, and steam fresh beets and salt very lightly.
Boil spaghetti and cool. Add chopped tempeh, scallions, cilantro, and julienned carrots. Toss in a dressing made by whisking together peanut butter, lime juice, soy sauce, garlic, and water.
Prepare or purchase tabouleh salad.
Add a few coconut macaroons for dessert. We love Jennies brand, made from just three ingredients: unsweetened coconut, honey, and egg whites.
