Steamed Sesame Eggplant

Preparation Notes

Peel and segment the orange.

Slice eggplant and steam until tender but not mushy.

Boil the edamame and let cool.

Prepare the sesame sauce by combining thoroughtly: 1 Tbs. tahini, 2 tsp. soy sauce, 2 tsp. rice vinegar, 1 tsp. honey, 1 tsp. sesame seeds, and a few drops of toasted sesame oil.

Prepare the sushi rice per the directions on the package.
