Preparation Notes
Cube the watermelon into bite-size pieces.
Cut an avocado in half and stuff it with leftover salmon. The salmon can be poached plain or with lemon and herbs. Alternatively, try it seasoned with Old Bay Seafood Seasoning or sauted in teriyaki sauce. Consider packing a lemon wedge as well.
If time allows, (perhaps on the weekend?) bake a loaf of whole wheat banana bread, zucchini bread or pumpkin bread.
Wash and trim the sugar snap peas.
